Description
A decaf that starts from the bean, not from the process. Selecting the green coffee is what holds the cup up: high-altitude lots with vivid acidity and dense body, chosen to balance the heavy sweetness decaffeination leaves behind. This lot was picked at the tail end of the region's harvest.
Castillo from farms around Chinchiná, Caldas, between 1,400 and 1,700 metres. Washed.
Decaffeination uses high-mountain spring water and ethyl acetate obtained from sugarcane molasses — a caffeine-selective solvent that occurs in nature. The process guarantees a minimum 97 % caffeine extraction, with a maximum solvent residual of 20 ppm.
