Description
Pitalito, in southern Huila, at 1,600 metres. Finca Satus belongs to Aldemar — a mechanic before he was a coffee grower — and covers two hectares. He plants pink bourbon, gesha, pacamara and supremo: four varieties that took years of adjustment in fertilisation, fermentation and post-harvest.
Behind it is Asosatus, an association of eighty coffee-growing families working on differentiated coffees, with continuous support for each producer.
48 hours of oxidation in tank. Pulped, then a second fermentation in a sealed tank for 24 hours. Washed. Slow drying on patios over nine days.
EP preparation, 95 % above screen 15. Moisture 10.4 %. Water activity 0.54. October 2025 harvest.
