Description
Apia, in Risaralda, is a town with a long coffee tradition, inside the Coffee Cultural Landscape declared a World Heritage Site by UNESCO.
Tatamá National Natural Park is what defines this coffee. It is an untouched massif connecting the biogeographic Chocó with the Andes, and it works as a thermal regulator: the cool, humid winds coming down from the páramo meet the warm sun on the slopes of Apia, and that temperature swing shapes how the fruit ripens.
The lot is a regional assembly across local growers, under the technical direction of Asoapia, which standardises picking and processing. Castillo and Caturra between 1,700 and 1,900 metres.
Selective hand-picking of ripe fruit only. 18 hours of oxidation. Pulped, then a short 12-hour fermentation to remove the mucilage. Mechanical drying over five days in silos, followed by fifteen days stabilising in the warehouse.
Excelso preparation, 95 % above screen 14. Moisture 10.9 %. Water activity 0.60. January 2026 harvest.
