This exceptional blend brings together two iconic coffee-growing legacies. From the mountains of Caldas, Colombia, the Valdés family contributes their exquisite Red Bourbon, grown at 1,790 meters in rich volcanic soil. Now in their fourth generation, the Valdés estate is a sanctuary of biodiversity where traditional craftsmanship meets modern sustainability.
Complementing this Colombian treasure is a select Catuai from the rolling hills of Minas Gerais, Brazil. Grown on a family-run estate dedicated to regenerative agriculture, this variety thrives in the sun-drenched plateau, providing the perfect structural foundation for a blend that honors the soul of South American coffee.
Process & Drying — The Art of Control
The magic of this blend lies in its dual processing approach:
- Colombia (Red Bourbon): A meticulous Natural Anaerobic process. Ripe cherries undergo 48 hours of fermentation in sealed tanks to amplify aromatic complexity and sweetness. They are then slow-dried on raised beds for up to 25 days.
- Brazil (Catuai): Processed using the Natural Method, where the cherries are dried intact under the Brazilian sun. This traditional technique enhances the body and develops deep, chocolatey undertones.
By marrying these two profiles, we achieve a balance of high-altitude vibrance and lowland richness.

The result is a sophisticated cup that dances between tradition and innovation. Expect a pronounced sweetness reminiscent of red berries and caramel, a silky, coating texture, and a clean finish with hints of toasted hazelnuts.
