ORIGIN
Don Victor is a second-generation coffee grower from Planadas, Tolima — a region known for its rich soil and the high quality of its coffees, largely because the land remained untouched during the armed conflict. Thanks to the quality of the coffee grown on the family farm and with the support of his father, Victor has been able to travel across the country promoting both his own farm’s coffee and that of his local community, allowing him to open strong commercial channels.

PROCESS & DRYING
Cherries are harvested at peak ripeness. The post-harvest process begins with floatation to remove defective cherries, followed by a 36-hour anaerobic fermentation in whole cherry inside plastic tanks. After fermentation, the coffee is depulped and mechanically dried in silos for 48 hours, then left to stabilize for 15 days.
