ORIGIN

The Valdés family has been producing coffee for four generations in the mountains of Caldas, Colombia. Their farm, located at 1,790 meters above sea level, cultivates traditional varieties in rich volcanic soils, surrounded by vibrant biodiversity. With a strong commitment to sustainability and the local community, the family has turned the estate into a place where tradition and innovation meet to showcase the best of Colombian coffee.

PROCESS & DRYING

This lot is a Natural with controlled fermentation. Ripe cherries are hand-picked and carefully sorted before undergoing anaerobic fermentation in sealed tanks for 48 hours, enhancing the coffee’s natural sweetness and aromatic intensity. The coffee is then slowly dried on raised beds for 20 to 25 days, under constant monitoring to ensure even drying.

The result is a cup with pronounced sweetness, fruity notes, and a silky texture — a true expression of Colombian terroir combined with the precision of natural fermentation.
